White Wine and Peach Sangria

Riesling wine perfectly complements the flavor of fresh peaches in this refreshing and easy summer sangria.

750 ml Riesling white wine 20 SmartPoints™

1 1⁄2 cup(s) diet peach flavored iced tea  0 SmartPoints™

2 fl oz schnapps, peach variety (1/4 cup)  17 SmartPoints™

3 medium peach(es), ripe, pitted, thinly sliced 0 SmartPoints™

1 large fresh apple(s), Granny Smith, thinly sliced  0 SmartPoints™

1 medium lemon(s), thinly sliced 0 SmartPoints™

1 1⁄2 cup(s) lemon lime diet soda 0 SmartPoints™

In a small pitcher, combine wine, iced tea, schnapps, peaches, apple and lemon; chill for at least 3 hours or overnight. When ready to serve, add soda and serve over ice. Yields about 1 cup per serving (including fruit and ice).

Notes

If you can’t find ripe peaches, feel free to substitute frozen peaches, or 2 peeled, sliced mangoes instead.

Nibble on this tasty, easy-to-tote snack at your next picnic or poolside party.

Picnic Basket Crostini

8 spray(s) cooking spray, enough to coat baking sheet and bread 1 SmartPoints™

10 oz French baguette bread, cut into 24 half-inch-thick slices 22 SmartPoints™

1⁄2 cup(s) marinated artichokes, about 6 pieces drained 3 SmartPoints™

4 medium plum tomato(es), finely chopped 0 SmartPoints™

1 Tbsp basil, fresh, chopped 0 SmartPoints™

8 olive(s), black, chopped 0 SmartPoints™

2 tsp olive oil 3 SmartPoints™

Preheat oven to 325°F. Coat a cookie sheet with cooking spray. Place bread slices on cookie sheet and lightly coat with cooking spray. Bake until lightly browned and crisp, about 10 minutes. Place bread slices on a wire rack; cool completely. Meanwhile, in a medium bowl combine artichoke hearts, tomatoes, basil, olives and olive oil; mix well. Spread about 1 tablespoon of artichoke mixture over each bread slice and serve. Yields 2 crostini per serving. (Note: If taking the crostini for a picnic, pack the artichoke mixture and bread slices in separate containers and store the topping in a cooler packed with ice.)

These coolers are a fun, festive drink for any warm-weather gathering. Feel free to vary the flavor with different types of sugar-free soda and fruit.

White Wine Coolers

16 fl oz diet soda, lemon-lime variety, chilled 0 SmartPoints™

25fl oz white wine, Sauvignon Blanc, chilled (about one 750 ml bottle) 22 SmartPoints™ 1⁄2 small orange(s), navel, washed, unpeeled, cut into 8 half moons 0 SmartPoints™

2 Tbsp mint leaves, sprigs (for garnish) 0 SmartPoints™ I

Pour soda into a large pitcher; slowly pour in wine until well-combined. Pour into glasses; garnish each with an orange slice and mint sprig. Serves 8. Yields about 5 fluid ounces per serving.

When I was visiting my mom, she made these for me and I ate them all week long!  They are very healthy and packed with great whole foods!  I especially love the muffins with a teaspoon or two of almond butter!  The muffins are made with whole wheat flour and oat bran.  Also of times I get the question, what is the difference between oat bran and wheat bran.  Oat bran contains the bran and the germ.  Oat bran is a soluble fiber and can be absorbed by the blood stream and is a cholesterol stripper.  As a fiber, it has no effect on the bowels.  Wheat bran is insoluble and not absorbed by the blood; therefore, it is the fiber which helps with bowels and acts as roughage.  The salad is all power foods except for the canola oil.  It is great for the summer time.

Diabetic Muffins

1 cup whole wheat flour

1 cup oat bran

3 tablespoons milk

1 egg

3 ripe bananas

¼ c. oil (I use flaxseed oil, could use canola oil)

1 ½ tsp. baking powder

¼ tsp. baking soda

½ tsp. cinnamon

½ c. raisins

Preheat oven to 375.  Mash bananas.  Mix everything together, except raisins.  Do NOT overmix.  Add raisins.  Pour into baking cup-lined muffin tins.  Bake 20 minutes ( I baked about 15).  Watch until golden brown.  They are great too freeze!  Makes 15 muffins.

I make these all the time.  They freeze great!  The recipe came from a past Weight Watcher brochure handed out in the meeting room.  These are great for a pre-workout snack or a grab and go breakfast, very filling!

Apple Bran Cereal Muffins

1 ¼ c. flour

1 T. baking powder

¼ tsp. cinnamon

¼ tsp. salt

2 c. bran flakes

1 c. fat free milk

1 egg

1 small apple, peeled, cored and finely chopped (about 1 c.)

½ c. applesauce

1/3 c. firmly packed brown sugar

2 T. margarine, melted

Mix flour, baking powder, cinnamon, and salt in lg. bowl.  Mix cereal and milk in another bowl; let stand 3 minutes.  Beat egg in med. bowl.  Add apple, applesauce, sugar, and margarine mix well.  Add cereal mixture mix well.  Add to flour mixture; stir just until moistened.  (Batter will be lumpy)  Spoon batter evenly into 12 medium muffin pan cups sprayed w/nonstick cooking spray, filling each c. 2/3 full.  Bake at 400 for 20 minutes or until golden brown.  Serve warm.  Makes 12 muffins.

These are yummy and so easy to have as a nutritious pre-workout, afternoon or a grab and go tie-me over to lunch snack.  I couldn’t believe all the wholesome ingredients.  Comes from the cookbook, I Love Leftovers!

Chocolate Chip-Raisin Energy Bars

1 c. old-fashioned oats

½ pumpkin seeds

½ c. ground flaxseed

½ c. shredded unsweetened coconut

½ c. raisin

½ c. mini-chocolate chips

½ c. instant nonfat dry milk

¼ c. white whole wheat flour

2 large eggs

1/3 c. honey

Preheat oven to 350.  Spray 9 x 13-inch baking pan with nonstick spray.  Combine oats, pumpkin seeds, and flaxseed in food processor; pulse 3-4 times until finely chopped.  Transfer to medium bowl; stir in coconut, raisins, chocolate chips, dry milk, flour, eggs, and honey.  Transfer to prepared baking pan and press evenly into pan with dampened fingers.  Bake until edges are browned, 20 minutes.  Let cool completely in pan on wire rack.  Cut into 24 bars.

This is a very old recipe I have used for years.  We were talking about it in one of my meetings and members asked if I would post on the website.  This is a recipe you will want to have on hand and make for a quick snack or breakfast on the go.

Bran Muffins

1 box Post 100 % Bran cereal

4 ½ tsp baking powder

1 ½ tsp ground cloves

3 ¾ c. skim milk

1 ctn. Egg substitute

3 c. flour

1 ½ tsp. baking soda

1 ½ tsp cinnamon

1 c. packed brown sugar

1 (8 oz.) can applesauce

Heat oven to 400.  Mix flour, baking powder, baking soda and spices in large bowl.  Mix cereal, milk and brown sugar in very large bowl.  Let stand 5 minutes.  Stir in egg substitute and applesauce.  Add flour mixture to cereal mixture.  Stir just until moistened.  (Batter will be lumpy)  Use muffin tins empty or put in cupcake papers.  Spoon batter into muffin pan 2/3 full.  If not using cupcake paper, then spray muffin pans with nonstick cooking spray.  Bake 18-20 minutes or until golden brown.  These freeze well and can be stored in Ziploc bags.

I used to eat this trail mix all the time.  It is an ample serving and will leave you satisfied if you are wanting something to snack on and is healthy!!!  I would recommend using mini chocolate chips so the chocolate flavor will be spread more evenly throughout the recipe.

Healthy Trail Mix

2 cups. cereal (mixture of corn and rice squares or bite-size shredded wheat)

2 cups (about 60) small pretzel twists

1 c. (about 24) dried apricot halves, chopped

1/4 c. semisweet chocolate chips

In medium bowl, combine all ingredients; divide among 4 snack-size resealable plastic bags.

I haven’t featured a muffin recipe in awhile.  And, this one even contains vegetable and whole grains!!  Enjoy for an on-the-go breakfast or just a snack.

Carrot-Bran Muffins with Dates

¾ c. all-purpose flour
¾ c. whole wheat flour
½ c. unprocessed wheat bran
1 T. baking powder
½ tsp. baking soda
½ tsp. ground allspice
1 c. unsweetened pineapple juice
¼ c. canola oil
¼ c. packed dark brown sugar
1 lg. egg
1 lg. egg white
2 small carrots, shredded (about 1 c.)
¼ c. pitted dates, chopped

Preheat oven to 375.  Line 12-c. muffin pan with paper liners.  Whisk together all-purpose flour, whole wheat flour, bran, baking powder, baking soda, and allspice in large bowl.  Whisk together pineapple juice, oil, brown sugar, egg, and egg white in medium bowl.  Add pineapple juice mixture to flour mixture and stir just until flour mixture is moistened. Stir in carrots and dates.  Fill muffin cups evenly with batter.  Bake until toothpick inserted into centers comes out clean, about 20 minutes.  Let cool in pan on wire rack 5 minutes.  Remove muffins from pan and let cool completely on rack.  Serves 12

Italian Snack Mix
¼ c. light stick butter
¼ c. grated Parmesan cheese
1 tsp. garlic powder
1 tsp. Italian seasoning
8 c. multigrain oat cereal
2 c. tiny pretzel twists
2 c. goldfish cheese crackers
12 dried apricots, chopped

Place butter in 5- or 6 quart slow cooker.  Cover and cook until melted, about 5 minutes on high.  Add Parmesan, garlic powder, and Italian seasoning; mix well.  Stir in cereal, pretzels, cheese crackers, and apricots.  Cook uncovered on high about 45 minutes, stirring every 15 minutes.  Reduce heat to low.  Cook uncovered, stirring occasionally, until mixture is crisp and fragrant, 2-3 hours.  Transfer mixture to large bowl and let cool completely.  (Serves 20)

Smart Bars

1 c. quick-cooking oats
½ c. sunflower seeds
½ c. toasted wheat germ
½ c. dried apricots
½ c. pecan halves
½ c. raisins
½ c. dried cranberries
½ c. instant nonfat dry milk
¼ c. whole-wheat pastry flour
1 tsp. cinnamon
1/3 c. maple syrup
2 lg. eggs
1 ripe banana, peeled and cut into chunks
1 tsp. vanilla extract

Preheat oven to 350.  Coat a 9×13-inch baking pan with nonstick spray.  Combine oats, sunflower seeds, wheat germ, apricots, pecans, raisins, cranberries, dry milk, flour, and cinnamon in a food processor.  Pulse until mixture is finely chopped.  Add syrup, eggs, banana, and vanilla and pulse until well combined.  Transfer mixture to pan, wet your fingertips with cool water, and press down to level the surface.  Bake until mixture is golden brown and firm to the touch, about 20 minutes.  Cool in pan and cut into 32 bars.  Serves 32

This recipe is from the cookbook, Weight Watchers:  Comfort Classics.  I have to say this is one of the best cookbooks I have seen some out in a long time in the meeting room.  Whenever Weight Watchers uses the name comfort and classics in the same title, you know the cookbook will be outstanding!!  I have gone through this cookbook and it is a keeper!  I would recommend it very highly.  I have marked over 30 recipes to make right away!  This is a great snack!.  Give it a try.  Good for lunches, too!

Hot “N” Smoky Snack Mix

6 c. fat-free popped popcorn
3 c. crispy corn cereal squares
2 c. crispy wheat cereal squares
2 c. unsalted mini pretzel twists
1 c. whole grain cheddar fish-shaped crackers
3 T. unsalted butter
2 T. Worcestershire sauce
2 T. packed brown sugar
2 tsp. smoked paprika
1 tsp. ground cumin
¼ tsp. cayenne
¼ tsp. salt
1/2 c. smoked almonds

reheat oven to 250. Spray a lg. shallow roasting pan with nonstick spray.  Combine popcorn, cereals, pretzels, and crackers in roasting pan.  Combine butter, Worcestershire sauce, and brown sugar in a small saucepan.  Cook over low heat, stirring occasionally, until butter is melted, 2 minutes.  Stir in paprika, cumin, cayenne, and salt.  Drizzle butter mixture over cereal mixture, stirring as you drizzle; stir well to coat.  Bake until crisp, 45 minutes, stirring every 15 minutes.  Stir in almonds.  Transfer mixture to a baking sheet lined with wax paper to cool completely. Store in an airtight container up to 1 week.  (Serves 24)

After asking your favorite spring and summer foods/drinks in a couple of meetings ago, it was very obvious that many people enjoy margaritas.  So, I have asked around and a fellow leader gave me a skinny margarita recipe for you.

Skinny Margarita

1 12 oz. can of diet lemon lime
1 tube lemonade drink powder (Weight Watchers Sugar Free Lemonade Mix Ins – on sale buy 2 boxes for $2.50 or Crystal Light SF powder)
1/3 c. lime juice
1 c. ice (more or less)
1 shot tequila

Blend all in blender.  Makes for a very large serving or share with a friend.
