Bonus Recipes using Weight Watchers Oatmeal

Apple Cinnamon Oatmeal Bread

Makes 1 small loaf for 3 SP

1 WW Apple Cinnamon oatmeal container

4 Tbsp egg whites

1/3 cup canned pumpkin

1 tsp pumpkin pie spice

1 tsp baking powder

Mix well with whisk. Pour into a mini loaf pan. Bake at 350 for 50-60 minutes

 

Strawberry Banana Bread

Makes 1 small loaf for 3 SP

1 WW Strawberry oatmeal container

4 Tbsp egg whites

1 banana

1 tsp baking powder

Mix well with whisk. Pour into a mini loaf pan. Bake at 350 for 50-60 minutes

 

 

Bonus Recipes:

Cocktail Mixer Punch  0 SP

Mix two bottles of Cosmopolitan City with a bottle of Diet Ginger Ale or two bottles of Margarita Mambo with a bottle of Diet Fresca or Diet Sprite for a quick, easy, 0 SP punch.

Cocktail Mixer Marinade

Both Cocktail Mixers can be used as a marinade for chicken or turkey. One member marinaded her Thanksgiving turkey with Cosmopolitan City and said it was simple and delicious!

 

 

 

I found this great little recipe book using different Smart Ones products.  I love the recipes starting with a breakfast burrito, Teriyaki Chicken Lettuce Wraps, and a Santa Fe Queso Dip.  How easy and yummy!

Santa Fe Breakfast Burrito

1 Smart Ones’ Cheesy Scramble with Hashbrowns meal

1 Smart Ones’ Santa Fe Style Rice & Beans meal

4 whole wheat tortillas

8 T. salsa

Cook each Smart Ones’ Cheesy Scramble with Hashbrowns and Santa Fe Style Rice & Beans meal according to package instructions.  In a large bowl, add both meals and mix together.  Wrap four tortillas in a damp paper towel and microwave on HIGH for 15 seconds.  Fill each tortilla with ¼ of the rice bean and egg mixture.  Roll burritos.  Top each with 2 T. of salsa.  Serves 4 (1 tortilla)

Teriyaki Chicken Lettuce Wraps

2 Smart Ones Teriyaki Chicken & Vegetables meals

½ c. canned water chestnuts, drained and chopped

8 large iceberg lettuce leaves

¼ c. unsalted dry roasted peanuts, chopped

Cook each Smart Ones Teriyaki Chicken & Vegetables meal according to package instructions.  Set aside. Once cooked, stir in water chestnuts.  Spoon ¼ c. of the mixture into the center of a lettuce leaf and sprinkle 1 ½ tsp. chopped peanuts on top.  To fold, bring the bottom of the leaf up and over the center of the filling, then fold both sides inwards to touch.  Continue to roll the leaf with the seam down and secure with a toothpick.  Serves 4 (2 lettuce wraps per serving)

Santa Fe Queso Dip

2 Smart Ones Chicken Santa Fe meals

16 oz. reduced fat pasteurized processed cheese spread, chopped

In medium saucepan over medium to high heat, combine both ingredients and heat until cheese is melted.  Stir frequently to prevent burning.  Serve with your favorite chips, pretzels, or veggies.  Serves 32 (2 T. per serving)

Another recipe using cauliflower and our cheddar twists which you can find in the meeting room.  It serves 2 people.

Creamy Cauliflower Gratins with Crunchy Cheddar Topping

1 lb. cauliflower florets

2 T. light sour cream

½ tsp. garlic salt

Pinch cayenne pepper

½ c. light shredded cheddar cheese, divided

1 packet Weight Watchers Cheddar Twists, crushed

Preheat oven to 350 degrees and spray 4-4oz ramekins with cooking spray.  It does serve 2 people though.

 

 

 

Cheddar Twist Tricks

Crumble Cheddar Twists atop a casserole such as green bean, tuna noodle, or scalloped potatoes.

Break them into crouton-size bits and sprinkle onto soups and salads.

Use a blender to grind them (add herbs, if desired) and use t coat fish, chicken, tofu, or veggies such as eggplant.

 

Blizzard

1 packet of Weight Watchers vanilla or chocolate smoothie mix

1 c. skim milk or 1 c. water

10 ice cubes

Weight Watchers mini bar

After blending, add in your favorite mini bar chopped up.  If you use milk, the smoothie counts as 2 milks. If you use water, the smoothie still counts as 1 milk.

 

 

 

I forgot all about this recipe.  A member in one of the meetings reminded me of it when we were discussing the breakfast meeting a couple of weeks ago.  It is using one of the Weight Watchers smoothie packets to make pancakes.  The smoothie packets are currently sold in the meeting room and come in Vanilla and Chocolate, .  The possibilities are endless.  You can make pineapple with coconut extract, chocolate with peanut butter, vanilla with strawberries, vanilla with pumpkin, and the possibilities are endless.  I have also added a little cottage cheese and oatmeal to add more protein or fiber.  Have fun and if you try any new flavors, let me know and I can post.  Have fun!

Smoothie Pancakes

3 egg whites

1/3 c. liquid egg whites

Water or fat free skim milk to get appropriate consistency

Baking powder

Mix together.  If the mixture is too thick, add a little water or a splash of fat free milk or almond milk.  Add baking powder to give them a lift!  Then, make ordinary pancakes using nonstick cooking spray.  Top off the pancake with yogurts, berries, bananas, etc.

Weight Watchers Shamrock Shake

This is my dessert every night.  Love this smoothie!  Very refreshing.

1 packet of Vanilla smoothie mix

1 c. skim milk

½ tsp. mint extract (spearmint not peppermint)

8 drops of green food coloring, optional

Ice and water (per taste),

Add all ingredients, blend on high until well mixed, Enjoy!!

Note:  If you need to get your oil in that day, add 1 tsp. of olive, canola, safflower, sunflower, or flaxseed oil.  Replace 1 c. skim milk with 1 c. unsweetened Almond Breeze, doesn’t count as a milk serving

 

 

As the holidays are fast approaching, we don’t have the time to cook meals, etc.  I found this great little cookbook we received at a staff meeting several years ago.  It takes Weight Watchers Smart Ones® and adds a few ingredients and “wolla”, you have dinner!  My two favorites:  Santa Fe Style Rice & Beans and Grilled Salisbury Steak & Gravy.  Enjoy!

South of the Border Lasagna

1 lb. uncooked hot or sweet Italian turkey sausage links, removed from casings
4 packages WW Smart Ones® Santa Fe Style Rice & Beans, cooked according to pkg. directions
1 egg
2 ½ c. mild, medium, or hot salsa, divided
9 uncooked lasagna noodles (about 9 oz), cooked according to pkg. directions and drained
½ c. shredded fat-free cheddar cheese

Preheat oven to 375.  In medium nonstick skillet, cook sausage over medium heat, stirring to break up meat, until no longer pink, 7-8 minutes.  Drain off any accumulated liquid set sausage aside.  In lg. bowl, combine Smart Ones and egg; set aside.  Spread ½ c. salsa in bottom of 9×13 baking pan; arrange 3 noodles in a single layer lengthwise over salsa.  Spread with half of the Smart Ones® mixture, then sprinkle with half of the cooked sausage and spread with ¾ c. salsa.  Repeat layers of 3 noodles, remaining Smart Ones® mixture, remaining sausage, and ¾ c. salsa.  Top salsa with remaining 3 noodles spread with remaining 1/2 c. salsa.  Bake, covered, until firm, 45-50 minutes.  Remove cover sprinkle with cheese.  Bake, uncovered, until cheese is melted, 5-10 minutes.  Let stand 5 minutes before serving.  Makes 8 servings.

Deviled Chili Dogs in Taco Shells

2 pkgs. Weight Watchers Smart Ones® Santa Fe Style Rice & Beans, cooked according to pkg. directions
¼ c. prepared spicy brown mustard
8 2-oz chicken or turkey frankfurters, boiled, broiled, or grilled
8 hard taco shells (about 3 oz)
1 medium tomato, diced
1 c. shredded iceberg lettuce

In medium bowl, combine Smart Ones® Santa Fe Style Rice & Beans and mustard.  Place 1 frankfurter into each taco shell; top with Smart Ones® mixture, tomato, and lettuce.  Makes 8 servings.

Cheeseburger Pie

3 pkgs. Weight Watchers Smart Ones ® Grilled Salisbury Steak & Gravy, cooked according to pkg. directions and cooled
1 small onion, chopped ½ medium green bell pepper, seeded and chopped
½ c. reduced-fat spaghetti sauce
¼ c. seasoned dried bread crumbs
1 tsp. dried oregano leaves
¼ tsp. each salt and ground black pepper
1 prepared unbaked frozen 9” pie crust
1 egg
2 tsp. prepared spicy brown mustard
1 tsp. Worcestershire sauce

Preheat oven to 400.  Using a tsp., scrape off as much sauce as possible from steak in Smart Ones ® Grilled Salisbury Steak & Gravy.  Transfer sauce to large bowl; set macaroni and cheese and sauce aside.  Set steaks on cutting board; chop finely.  Transfer to bowl with reserved sauce; Stir in onion, bell pepper, spaghetti sauce, bread crumbs, oregano, salt and black pepper.  Spoon into pie crust, spreading evenly; set aside.  Add remaining ingredients to reserved macaroni and cheese; spread evenly over steak mixture.  Bake until crust is lightly browned, 40-45 minutes.  Let stand 5 minutes before serving.  Makes 6 servings

ausage Pizza Florentine

2 pkgs. Weight Watchers Smart Ones® Lasagna Florentine, cooked according to pkg. directions and cooled
8 oz. uncooked hot or sweet Italian turnkey sausage links, removed from casings
1 10oz. prepared thin pizza crust
½ c. shredded fat-free mozzarella cheese
2 T. fat-free grated Italian cheese topping

In food processor fitted with steel blade, process Smart Ones® using on-off pulsing motion until very finely chopped (do not puree).  Set aside.  In medium nonstick skillet, cook sausage over medium heat, stirring to break up meat, until no longer pink, 7-8 minutes.  Drain off any accumulated liquid; set sausage aside.  Place pizza crust on prepared baking sheet; spread with chopped Smart Ones® to within ½ “ of edge.  Sprinkle with cooked sausage, then cheeses.  Bake until cheeses to begin to brown, 12-15 minutes.  Cut into 6 wedges.  Makes 6 servings.

Another great recipe I heard from one of the staff:  Take a bag of Pizza Pretzel Thins and one piece of Weight Watchers string cheese.  Cut up the cheese to fit a small piece of cheese and place on a pizza pretzel thin and melt the cheese in the microwave.  Sounds yummy!

WEIGHT WATCHERS OATMEAL:

Weight Watches Amazing Oatmeal Cookies
1 container Weight Watchers Oatmeal
½ tsp. baking powder (optional)
¼ c. to 1/3 c. water
Gradually stir in water until it is the consistency of oatmeal cookie dough.  Split the mixture into 4 cookies.  Drop on a baking sheet sprayed with nonstick cooking spray.  Bake at 350 until firm, 15 minutes or so.  Great breakfast on the go!

Weight Watchers Oatmeal Cobbler
1 container Weight Watchers Oatmeal
1 can peaches packed in splenda
4 butter sprays
Pour undrained peaches in an 8 X 8 pan, sprinkle oatmeal on top, spray butter spray on oatmeal.  Bake at 350 for 20 minutes.

Weight Watchers Oatmeal Pancake
1 container Maple Brown Sugar Weight Watchers Oatmeal
¼ c. water
1 egg white
Mix all ingredients together in oatmeal cup.  Spray nonstick pan with nonstick cooking spray.  Pour batter in pan.  Cook for 2 minutes on each side.  Recipe makes one large pancake which tastes like French toast with maple syrup on it.  (NOTE:  I like to put my 1 tsp. of flaxseed oil on the pancake along with my sugar free syrup.  Also, you can use 3 egg white instead of the water, which give you more protein.

SMOOTHIES:

Also, thanks to Nancy, staff member in Olathe for giving us this great idea!!!  Many of you have been asking about the smoothie recipe using the pudding powder that she developed.  Well, basically, you take one smoothie packet (ie:  WW Vanilla with Sugar Free, Fat Free pudding mix and mix with milk.  You will first pour the milk into the blender/magic bullet.  I like to use light vanilla soy milk then pour in the smoothie mix, then the pudding powder only, and about 7-8 ice cubes.  This makes a very thick smoothie!!!  Some more great recipes developed by staff.

Cookies and Cream Shake
1 pkg. WW Vanilla Smoothie
1 C. skim milk
1 WW Cookies & Cream Mini Bar
4-8 ice cubes
Blend all ingredients and enjoy!

Peanut Butter Blizzard
1 pkg. WW Vanilla Smoothie
1 C. skim milk
1 WW PB Bliss Mini Bar
4-8 ice cubes
Blend all ingredients and enjoy!

Mint Crisp Shake
1 pkg. WW Vanilla or Chocolate Smoothie
1 C. skim milk
1 WW Chocolate  Mint Mini Bar
4-8 ice cubes
Blend all ingredients and enjoy!

In all the shake recipes, be sure to chop up the bar in small pieces and the use the ice in order to keep the bar from dropping straight to the bottom of the glass.  I like blending the smoothie first with the milk and ice and then adding the mini bar with a quick blend.
Here are some other ideas:
•    Remember the smoothies are a power food once a day and count as a milk even when made with water:
•    I would recommend making and blending your smoothie and then adding the bar for just a quick blend to chunk the bar.
•    Use water or milk – milk tastes great but to save on points, use water.
•    Use any diet soda – root beer, cream soda, etc instead of yogurt or milk
•    Use mix ins to add lemonade or peach flavor
•    Use at least 5 ice cubes to drink the smoothie; 10 to eat with spoon and be thicker.  But, the flavor will also be less if use more ice cubes.
•    Use different flavored extracts such as mint with the chocolate, coconut with orange or vanilla, banana with chocolate, vanilla, or orange, or almond with chocolate or vanilla.
•    Pour leftover coffee into ice cube trays, freeze, and blend them in their smoothies.
•    Use V-8 diet splash for peaches and cream or orange smoothies
•    Use the sugar free syrups for flavoring your coffee, such as the caramel, raspberry, and vanilla

Vanilla Smoothie:
Pina Colada:  1 pkt. Vanilla blended with 1/8 tsp coconut and rum extracts, 1/3 c. crushed pineapple, 1 T. frozen lemonade, 8 oz. water/ice
Café Latte:  1 packet vanilla blended with 1 tsp. instant coffee and 8 oz. water/ice
Root Beer Float:  1 packet vanilla blended with 8 oz. diet root beer/ice
Fruity Smoothie:  1 packet vanilla with 1 c. frozen fruit (ie:  raspberries, strawberries, blueberries) blended with 8 oz. water/ice
Pumpkin Pie Smoothie:  1 packet vanilla, 1 c. skim milk, 4-5 ice cubes, 1 2/ c. pumpkin, ¼ tsp. pumpkin pie spice or cinnamon, 1 tsp. vanilla, 2 -3 packets of sweetener
WW Breakfast Latte:  1 c. black coffee, 1 c. skim milk, 1 packet of chocolate or vanilla.  Mix all ingredients in blender and heat slowly in microwave or it will overflow.
Mounds Bar:  1 packet chocolate blended with 1/8 tsp coconut extract and 8 oz. water/ice
Almond Joy:  1 packet chocolate blended with 1/8 tsp coconut extract, 1/8 tsp. almond extract, and 8 oz. water/ice
Peanut Butter Cup:  1 packet chocolate blended with 1 T. low-fat peanut butter and 8 oz. water/ice
Chunky Monkey:  1 packet chocolate blended with ½ frozen banana and 8 oz. water/ice
Grasshopper:  1 packet chocolate blended with 1/8 tsp. mint extract and 8 oz. water/ice
Coffee Caramel Macchiato:  (Macchiato means marked in Italian, I learned at Starbuck’s):  1 chocolate packet with 1 tsp. instant coffee and 1 tsp. vanilla extract, and 1 T. caramel topping and 8 oz. water/ice
Peanut Butter Blizzard:  (THIS IS MY FAVORITE)  1 Chocolate or Vanilla Smoothie, 1 c. skim milk, 1 c. ice, 1 WW Peanut Butter Bliss Bar cut into 4 pieces.  Add top blender and blend.
